其實牛小排和我們中餐里常吃的「牛仔骨」是一個部位的肉，指的是牛的胸肋骨部位，第6至第8根肋骨之間帶油筋的肉。不過帶骨頭的一般叫「牛仔骨」，不帶骨頭的被稱為「牛小排」，牛小排可以用作牛排的方式來烹飪，牛小排的價格也高於牛仔骨。

牛仔骨的脂肪含量很高，所以牛小排的大理石紋非常豐富，肉質非常鮮美，除了煎之外，燒烤味道也相當不錯。

相對於其他一些部位的肉，牛小排相當好認，牛小排一般成長條狀，中間連著一根筋（在化凍或煎烤的過程中，肉可能會順著這根筋散成兩片，這屬於正常現象哦！並不是拼接肉，相較而言，因為拼接肉裏面加了卡拉膠這些化學物質，反而不容易散）。
