西班牙野生紅蝦被現今世界各地最高端的西餐廳列入菜單,它被知名食家譽為世界上最好吃的蝦


主要產地為西班牙東北部港口Palamós,Palamós對紅蝦的捕撈作業有着嚴苛的規定。捕撈區域僅限在水深300-1000米的福尼拉峽谷 (Canó de la Fonera),捕撈船的動力不超過500馬力,拖網不得貼近海底,捕撈網孔直徑不能超過40mm等。而紅蝦的捕撈也沿用休漁制,每年休漁4次,共計60天。漁船的作業時間也有制約,船員每周只工作5天,每天不超過11.5小時。


西班牙野生紅蝦最吸引人的,就是它的鮮甜與濃濃蝦味,有人形容為「有一般野生海蝦的10倍濃香」;而最能體現它的濃蝦味的,就是蝦頭的蝦腦。西班牙野生紅蝦適合刺身、鹽烤、油煎、鐵板燒。雖然價格不菲,但仍深得許多名人明星追捧。


在烹調之前,流水解凍或在冷自來水中解凍約6-10分鐘我們可以先用小勺品嘗它的蝦腦,那是來自於大海的一種鮮美,然後我們再用刀叉,切下一小塊蝦肉,品嘗它的原滋原味,不同於其他蝦類的Q感,紅魔蝦的口感比較軟嫩,最後再將蝦肉附上一點點的蜂蜜芥末醬,蝦的鮮嫩和蜂蜜芥末醬的香甜,便縈繞於唇齒之間。
