Confit 一字源自法文的confire,是指一項食材保存的方式,在法國西南部應用相當普遍,主要是利油脂將肉類完全包覆﹑隔絕空氣避免細菌滋生,以達致到保存食物的效果,中文翻譯為「油封」。
西班牙也採用「油封」方式保存食物,在當地,它是利用鴨油或鵝油包覆本身肉類進而保存食材,加上溫度的控制,不僅能延長食材的保存期限,也透過這個轉換食材的手法,帶出食材本身油脂的香氣。
