鹿兒島和牛牛頸脊 

牛頸脊或牛上腦,位於牛頸與肩胛之間,即頸部上側牛頭位置到前脊椎上部的肉,屬運動量較多的部位,有適量油花,肉質鮮嫩爽滑,肉味濃郁。

如何分辨日本和牛級數?

日本和牛分為A(良好)、B(一般標準值)、C(較差)3級,再按肉質為「油花分佈程度」、「肉色澤」、「肉結實度及肌肉紋理」、「脂肪色澤品質」4個項目評分,最低為1分,最高為5分,因此A5級和牛又被譽為「極品和牛」,油脂含量高,肉質軟腍,稍微一煎已經可以將肉香及油香發揮得淋漓盡致!而相對油脂含量較低的A3級和牛,牛味相對地較為濃郁,所以用來作日式火鍋 (Shabu Shabu) 食材就既可以保留油潤口感,同時品嚐得到和牛獨有的香氣。
